“Running a business is very hard. Hard work. Long hours. A very small [profit] margin,” Nguyễn said. ”It’s hard, but I think it’s about the community, the compassion you have. When you think of that, it gives you more energy … you can do the things you never thought you could do. When the customers show up and enjoy the food and say, ‘Thank you,’ that’s everything you need. The community helps you survive.”
